...insurance companies offer "agreed value" policies, which basically just means your premiums will be higher in order to guarantee a larger payout in the event of a total loss. I'm not sure how this works if someone else damages your car, though - I guess you would have to file a claim with your insurer to recoup losses not covered by the at-fault party's insurer, which isn't ideal.
